Nick Birchall is a sixth-generation farmer’s son who has worked with producers for more than twenty years, choosing cheese at its peak alongside affineur and judge Carol Faulkner, and judging at the Nantwich Cheese Festival. In 2020 he and Chris Hogan opened the shop on Hospital Street, in one of the buildings that survived the Tudor Fires of 1583.

Yes, always. The counter is there to be tasted. Tell us what you like and we will cut you a sliver of two or three to try, British or Continental, before you choose.
We do, and we have been building them for 30 years. We plan the cake with you in one of our quiet rooms over a tasting, then size, colour and style it to your day. One cake or a cheese tower, delivered to your venue ready to place.
Each month you receive four cheeses, 800g in all, cut the morning of dispatch and wrapped in wax paper, with chutney, crackers and tasting notes. It goes out chilled on the last Wednesday. Three months is 159.50 pounds, six months is 310 pounds, and you will not get the same cheese twice.
Yes. The counter carries vegetarian and vegan cheeses as a proper choice, alongside unpasteurised raw-milk cheeses, organic lines, goats and ewes. Ask and we will point you to the ones worth your time.
We can. An evening at your home or work runs about 90 minutes for six to twelve guests, and we bring the wines, the cheese, the biscuits, the chutneys, the plates and the glasses. Call 01270 620799 to plan one.
Monday to Saturday 8:30 to 5:30, and Sunday 11 to 5. Closed only on Christmas Day, Boxing Day, New Year’s Day and Easter Sunday.
On Hospital Street in the centre of Nantwich, the historic Cheshire market town, a short walk from the square and the church of St Mary. Through the door is the British counter, the Continental counter and the deli shelves, with the tasting room above.
